Ingredients
10 karela or bitter gourds, peeled and chopped into rings
Oil, for frying
2-3 potatoes, peeled and chopped into fries
1 tbsp mustard oil
1 tsp jeera or cumin seeds
1 tbsp meethi or imli chutney
2 tsp salt or to taste
1 tsp turmeric or haldi powder
1 tsp coriander powder or dhania
1/2 tsp red chilli powder
1/2 tsp amchoor or dry mango powder
1/2 tsp garam masala
1 tsp jeera or cumin powder
2-3 green chillies, finely chopped
1 onion, sliced
1 tomato, chopped
Few coriander leaves, for garnish
1 tsp kasuri methi
Instructions
Take the peeled and chopped karela rings in a bowl and add salt to it. Coat them nicely with salt and keep it in the fridge for 6-8 hours. This helps in removing the bitterness of the karela.
Heat oil in a pan or Kadhai. Fry the karela rings and the potato fries, separately, till light brown in colour.
Remove the oil from the pan and add 1 tbsp mustard oil. Add jeera seeds and saute till they begin to sizzle.
Now add in the sliced onion and green chillies. Saute till the onions become translucent and then add the tomatoes.
Saute the tomatoes till soft and mushy.
Now add in all the spices, salt and meethi chutney.
Finally add in the fried karela rings and potato fries and mix it well.
Take off from the gas and sprinkle some chopped coriander leaves.
Serve aloo karela fry with some hot paranthas.
