Baingan Ka Bharta


Serves 6

Ingredients

  • 2 baingan or eggplant, roasted on flame

  • 2 onions, sliced

  • 2-3 tomatoes, chopped

  • 3 green chillies, chopped

  • 1 cup peas, boiled

  • 1 tbsp mustard oil

  • 2 tsp salt

  • 1/2 tsp red chilli powder

  • 1/2 tsp black pepper powder

  • 1 tsp haldi or turmeric powder

  • 1/2 tsp garam masala

Instructions

  1. Put the baingan on a wire rack and place it on a medium flame.

  2. Roast it well from all sides and then remove the outer skin.

  3. Chop the baingan into a mushy paste.

  4. In a Kadhai or pan, add oil and saute the onions till translucent.

  5. Ten add the green chillies and turmeric powder and red chilli powder.

  6. Add the tomatoes and cover and cook for 5 minutes

  7. Once the tomatoes are mushy, add salt, black pepper powder and garam masala to it. Mix well.

  8. Now add the baingan and blend it well.

  9. Finally add in the boiled peas and cover and cook for another 5 minutes.

  10. Enjoy the baingan ka bharta with some hot phulkas.
