Ingredients
2 beetroots, grated
1 cup suji or semolina
2 cups water
1 1/2 cup sugar
1/4 cup ghee
Some chopped nuts, cashewnuts, almonds and pistachios
1/2 tsp cardamom or elaichi powder
Instructions
Add 2 tbsp ghee into a pan and roast suji or semolina on low flame until light brown and turns fragrant, while stirring continuously. Take it out in a bowl when done.
Now add 1 tbsp ghee and roast the nuts till lightly brown.
Add the remaining ghee to the pan and cook the grated beetroot.
Let the water released by beetroot completely evaporate.
Cook it for 10-12 minutes.
Meanwhile, prepare sugar syrup by mixing sugar and water and allowing it to come to a boil.
Once beetroot has cooked properly, add in the roasted suji and nuts and the remaining ghee and finally the sugar syrup slowly, so that no lumps are formed.
Cover and cook for 5 minutes on low flame. Add elaichi powder and serve warm.
Beetroot Halwa tastes super good and tasty.
Tip: You may add 1/2 cup of milk and cook in the end for enhanced flavours and colour.
