Try out the most delicious ever Beetroot Phirni, enriched with the goodness of the healthy beetroot and the taste of saffron and rose. This is an absolute must try.
Serves 2
Ingredients
1/2 beetroot, peeled and pureed
3 cups full fat milk
3/4 cup cooked rice
3-4 strand saffron
1/2 tsp elaichi or cardamom powder
1/4 cup sugar
1/2 tsp rose essence
1 tsp chopped pistachios, for garnish
1/2 tsp organic red food colour, optional
Instructions
In a pan, boil milk.
Grind the cooked rice so that it becomes fine and small.
Add rice to the boiled milk and cook it on a low flame.
Add pureed beetroot and sugar and continue to cook till the quantity reduces to 1/3 rd of the original.
Then add elaichi powder, saffron, rose essence and red food colour.
Cook for 2-3 minutes and then transfer to two bowls.
Garnish the Beetroot Phirni with some chopped pistachios and enjoy it warm or chilled.
