Beetroot Phirni | Red Velvet Phirni | Indian Dessert

Try out the most delicious ever Beetroot Phirni, enriched with the goodness of the healthy beetroot and the taste of saffron and rose. This is an absolute must try.


Serves 2

Ingredients

  • 1/2 beetroot, peeled and pureed

  • 3 cups full fat milk

  • 3/4 cup cooked rice

  • 3-4 strand saffron

  • 1/2 tsp elaichi or cardamom powder

  • 1/4 cup sugar

  • 1/2 tsp rose essence

  • 1 tsp chopped pistachios, for garnish

  • 1/2 tsp organic red food colour, optional

Instructions

  1. In a pan, boil milk.

  2. Grind the cooked rice so that it becomes fine and small.

  3. Add rice to the boiled milk and cook it on a low flame.

  4. Add pureed beetroot and sugar and continue to cook till the quantity reduces to 1/3 rd of the original.

  5. Then add elaichi powder, saffron, rose essence and red food colour.

  6. Cook for 2-3 minutes and then transfer to two bowls.

  7. Garnish the Beetroot Phirni with some chopped pistachios and enjoy it warm or chilled.
