Bhindi Aloo Fry | Bhindi Aloo Masala

Serves 5

Ingredients

  • 500 gms bhindi, washed and chopped

  • 2 tbsp mustard oil

  • 1 tsp, jeera or cumin seeds

  • 4 potatoes, chopped and fried

  • 1 tsp ginger garlic paste

  • 1 onion, chopped

  • 1 tomato, chopped

  • 2-3 green chillies, finely chopped

  • 2 tsp salt

  • 1 tsp coriander powder

  • 1 tsp haldi or turmeric powder

  • 1/2 tsp garam masala

  • 1/2 tsp red chilli powder

  • 1 tsp amchoor or dry mango powder

Instructions

  1. Firstly, wash the bhindi and let them dry for sometime.

  2. Now chop off the cap and chop the bhindi into small pieces.

  3. In a pan, add mustard oil and saute the bhindi till it changes colour and is evenly cooked. Keep stirring in between.

  4. Once done, take it out in a bowl.

  5. Again add oil to the pan and add cumin seeds.

  6. Once the begin to crackle, add green chillies, ginger-garlic paste and onions.

  7. Saute onions till they turn translucent and then add tomatoes.

  8. Once the tomatoes turn mushy, add all the spices and mix well.

  9. Finally add in the sautéed bhindi and fried potato chips and give it a good mix.

  10. The tempting bhindi aloo fry is ready to be served.
