Ingredients
500 gms bhindi, washed and chopped
2 tbsp mustard oil
1 tsp, jeera or cumin seeds
1 tsp ginger garlic paste
3 onions, diced
2-3 green chillies, split into half
2 tbsp curd
2 tsp salt
1 tsp kasuri methi
1 tsp coriander powder
1 tsp haldi or turmeric powder
1/2 tsp garam masala
1/2 tsp red chilli powder
1 tsp amchoor or dry mango powder
few coriander leaves, for garnish
Instructions
Firstly, wash the bhindi and let them dry for sometime.
Now chop off the cap and chop the bhindi into small pieces.
In a pan, add mustard oil and saute the bhindi till it changes colour and is evenly cooked. Keep stirring in between.
Once done, take it out in a bowl.
Again add oil to the pan and add cumin seeds.
Once the begin to crackle, add green chillies, ginger-garlic paste and onions.
Saute onions till they turn translucent.
Now add the curd and then add all the spices and mix well.
Finally add in the sautéed bhindi and mix. Garnish with coriander leaves.
Bhindi do pyaza is ready to be served.
