Ingredients
3 tbsp mustard oil
300 grams bhindi or lady finger
1 medium size onion, chopped
1 tsp ginger-garlic paste
2 medium size tomatoes, chopped
1 tsp coriander powder
1/2 tsp red chilli powder
3/4 tsp turmeric powder
1/2 tsp garam masala
1/2 tsp jeera powder
1/2 tsp amchoor powder or dry mango powder (optional)
2 1/2 tsp salt
1 tbsp roasted peanut powder
Instructions
Rinse the bhindi well in running water and dry them on a large plate.
Remove the base and stalk and chop the bhindi.
Heat 2 tbsp oil in a kadhai. Add the bhindi and saute it on low flame, till they are completely cooked. Keep stirring in between. This will take about 15-20 minutes. Then take them out.
Now again add 1 tbsp oil to the same kadhai.
Add chopped onions and fry till they become translucent. Add the ginger-garlic paste and saute for a minute.
Now add the chopped tomatoes and saute till the tomatoes become soft and mushy.
Add peanut powder, coriander powder, red chilli powder, turmeric powder, garam masala, jeera powder and salt.
Mix well and saute for a few seconds.
Add the sautéed bhindi and cook for 10 minutes.
10. Bhindi Masala is ready!
