Some food creations are such that they make you fall in love with them at the first sight! This was one such creation!
We tried out our variation of the Blue Velvet Cake, that is eggless, super-soft and delicious! The colour came out so well that we just couldn't stop ourselves from finishing this up in one go!

Ingredients
1.5 cups maida or all purpose flour
1 tsp baking powder
1 cup yogurt or plain curd
1/2 tsp baking soda
3/4 cup sugar
1/2 cup vegetable oil
1 tsp vanilla essence
1 tbsp blue food colour
some oreo and digestive biscuits, for garnish
Instructions
Preheat the oven or OTG at 200˚C for 15-20 minutes.
In a bowl take curd or yogurt, add baking soda to it and keep aside.
In a separate bowl, add sugar and oil and whisk it well.
Sieve the flour and baking powder to the oil-sugar mix.
Mix it well and add vanilla essence and blue food colour to it.
Add the curd and baking soda mix.
Now gently fold the batter together till there are no lumps left.
Grease a cake tin and transfer the batter to it.
Garnish it with some chopped Oreos and digestive biscuit pieces on top.
Bake it at 180˚C for 35-40 minutes or till a skewer inserted comes out clean.
The softest and spongiest eggless Blue Velvet Cake is ready!
