Makes 20 cookies
Ingredients
1 cup maida or all purpose flour
1/4 cup cocoa powder
1/2 cup powdered sugar
1/2 cup brown sugar
1/2 cup soft salted butter
1 tsp vanilla essence
1/2 tsp baking soda
1/2 tbsp cornflour
1/2 dark chocolate, chopped into small chunks
2 tbsp milk
2 tbsp butterscotch nuts, crushed
Instructions
In a bowl, add both the sugars and soft butter and whisk them till it turns slightly fluffy.
Now add the rest of the ingredients i.e., flour, cornflour, baking soda, cocoa powder and vanilla essence to it.
Mix them together and add milk little by little till it comes together to form a dough.
Refrigerate it for 15 minutes.
After 15 minutes, take out the dough and form small dough balls using hands and press them gently. You may keep it as it is or cut it into different shapes.
Place it on a baking tray lined with a parchment paper or baking sheet and press in the chocolate chunks or chips on to each cookie. Also, sprinkle some crushed butterscotch nuts on each. This adds an extra crunch to the cookies.
Preheat the oven or OTG (Mode: Fan + upper rod + lower rod) at 200*C for 15 minutes.
Then place the baking tray into the oven or OTG and bake at 180*C for 15-20 minutes.
After 15 minutes, take out the cookies and allow them to cool for another 15 minutes.
