Crunchy and crispy corn lollipops are the perfect party starter! So enjoy the corn season with some corn lollipops.
Serves 5
Ingredients
1.5 cup corn kernels, boiled
3-4 potatoes, boiled and mashed
1 tbsp butter
1 tbsp ginger-garlic paste
3-4 green chillies, finely chopped
1/2 tsp ajwain or carom seeds
3 tbsp besan or gram flour
1/2 tsp red chilli powder
1/2 tsp turmeric powder
1/2 tsp black pepper powder
1/2 tsp garam masala
1 tbsp salt or to taste
1 tsp kasuri methi
oil, for frying
1/4 cup cornflour paste (1 tbsp cornflour with 2 tbsp water)
1/2 cup bread crumbs
10 ice-cream sticks
Instructions
In a grinder, coarsely grind the corn kernels.
In a pan or kadhai, add butter and then add ajwain seeds.
Once they begin to crackle, add ginger-garlic paste and green chillies.
Then add besan and roast it for 2-3 minutes.
Add the corn paste and saute till it become dry and comes together.
Now add in all the spices and salt and mix well.
Switch off the gas and add boiled potatoes and kasuri methi.
The batter is ready.
Make small balls or tikkis from it and dip it in some cornflour paste and then roll it over some bread crumbs.
Insert half an ice-cream stick inside each Tikki.
Heat oil in a pan or kadhai and deep fry the corn lollipops.
Serve your corn lollipops with some mint chutney and tomato ketchup.
