The official corn season is here and it is time to indulge in some juicy sweet corn recipes! Starting with the scrumptious corn seekh kebabs!
Serves 5
Ingredients
1.5 cup corn kernels, boiled
3-4 potatoes, boiled and mashed
1 tbsp butter
1 tbsp ginger-garlic paste
3-4 green chillies, finely chopped
1/2 tsp ajwain or carom seeds
3 tbsp besan or gram flour
1/2 tsp red chilli powder
1/2 tsp turmeric powder
1/2 tsp black pepper powder
1/2 tsp garam masala
1 tbsp salt or to taste
1 tsp kasuri methi
oil, for cooking
1 tsp chaat masala
1 lemon juice
Instructions
In a grinder, coarsely grind the corn kernels.
In a pan or kadhai, add butter and then add ajwain seeds.
Once they begin to crackle, add ginger-garlic paste and green chillies.
Then add besan and roast it for 2-3 minutes.
Add the corn paste and saute till it become dry and comes together.
Now add in all the spices and salt and mix well.
Switch off the gas and add boiled potatoes and kasuri methi.
The kebab batter is ready.
Heat a non-stick pan and apply some oil to it.
Make kebab rolls from the batter and insert a wooden skewer inside and cook it from all sides.
Sprinkle some chaat masala and lemon juice and serve hot.
