Dal Fry | Arhar Ki Dal | Toor Dal

Serves 5

Ingredients

  • 1 1/2 cup toor dal, also known as arhar dal

  • 1 teaspoon turmeric/haldi powder

  • 3 teaspoon salt, adjust to taste

  • 3.5 cups water

  • 1/4 teaspoon hing or asafoetida

For Tempering/Tadka

  • 2 teaspoons ghee

  • 1 teaspoon cumin seeds

  • 1 teaspoon ginger chilli paste or ginger garlic paste

  • 2 medium tomatoes, chopped

  • 1 teaspoon red chili powder

  • 1/2 teaspoon garam masala

Instructions

  1. To a pressure cooker add toor/arhar dal along with turmeric, salt, hing and water.

  2. Pressure cook for 4 whistles on high heat then lower the heat and let it cook for 3 to 4 minutes. Let the pressure release naturally. Then set it aside.

  3. In a pan, heat ghee on medium heat. Once hot, add the cumin seeds. Saute for few seconds until fragrant.

  4. Add the garlic-ginger-green chili paste. Cook for 1 to 2 minutes until the raw smell goes away.

  5. Add the chopped tomatoes and mix. Cook for 7 to 8 minutes until tomatoes look soft and mushy.

  6. Then add the garam masala and red chili powder. Stir the spices with the masala for a few seconds. Turn off the gas.

  7. Open the pressure cooker and mix the dal. Let the dal simmer for 3 to 4 minutes.

  8. Pour the tadka over the dal and mix well.

  9. Garnish dal tadka with cilantro and serve.
