Having tried many banana cakes, this one hands down, is the most moist, fluffy and soft Eggless Banana Cake that I've ever tried!

Ingredients
4 ripe bananas
3/4 cup atta or whole wheat flour
3/4 cup maida or all purpose flour
1 tsp baking powder
1 tsp baking soda
1/8 tsp cinnamon powder
A pinch of salt
1/2 cup sugar
1 tsp vanilla essence
1/2 cup oil
1/2 cup mixed nuts, for garnish
Instructions
Preheat the oven or OTG at 200˚C for 15-20 minutes.
In a bowl sieve all the dry ingredients, wheat flour, maida, baking soda, baking powder, cinnamon powder, salt and sugar.
In another bowl, mash the bananas well and add vanilla essence to it.
Add the mashed bananas to the dry ingredients.
Add oil to the batter.
Now gently fold the batter together till there are no lumps left.
Grease a cake tin and transfer the batter to it.
Garnish it with some chopped nuts on top.
Bake it at 180˚C for 35-40 minutes or till a skewer inserted comes out clean.
The softest and spongiest eggless Banana Cake is ready!
