For all the guava lovers out there, this cake is a divine treat! Enriched with spicy guava flavours and the benefits of jowar flour, this is indeed a healthy cake!
Makes 3-layer 1.5 kgs cake
Ingredients
3 cups jowar atta or sorghum flour
1 cup guava puree, 3-4 guavas pureed after removing seeds
1 + 1/2 cup milk
1 cup curd
1 cup oil
1 +1/2 cup brown or coconut sugar
2 tsp baking powder
1/2 tsp baking soda
2 tsp white vinegar
1 tsp salt
A pinch of red chilli powder/ red chilli flakes
1 tsp vanilla essence
1/2 tsp cinnamon
8-10 drops of Red food colour
5-6 drops green food colour
3 guavas, sliced
1 cup whipping cream
2 tsp red chilli flakes
2 tbsp chocolate sauce
Instructions
Preheat the oven or OTG at 180˚C for 15-20 minutes.
In a bowl, add brown sugar and oil and whisk them well.
Add vanilla essence and guava puree to it.
Add curd and vinegar and whisk all the dry ingredients together.
To this, sieve jowar flour, baking powder, baking soda, salt, cinnamon, red chilli powder.
Now begin adding milk, little by little.
Using a spatula, milk the dry ingredients into the wet ingredients gently.
Now once the batter is ready, divide it into 3 parts.
To first add, 5-6 drops of red food colour. To the second, 3-4 drops and to the last one, 1-2 drops.
Mix the three batters separately to get the desired colour.
Transfer them into greased and lined cake moulds and bake them at 180˚C for 40-45 minutes.
Take out and let them cool down completely.
Meanwhile, take 1 cup cream and whip it till it forms soft peaks.
Add few drops of green colour to it and whip it to form green whipped cream.
Take one cake and apply 2 tbsp of whipped cream on top.
Spread it evenly and then place some sliced guavas on top and sprinkle some chilli flakes.
Repeat the same for all the layers and drizzle some chocolate sauce over the topmost layer.
