Eggless Strawberry Cupcakes | No Refined Flour

The Whole Wheat Eggless Strawberry Cupcakes are so soft and moist that they melt in the mouth immediately.


Makes 20

Ingredients

  • 1 cup yogurt or plain curd

  • 1/2 tsp baking soda

  • 1+1/2 cup whole wheat flour

  • 1 tsp baking powder

  • 3/4 cup granulated sugar

  • 1/2 cup oil

  • 1 tsp vanilla extract

  • 9-10 fresh strawberries, sliced

  • 1/3 cup milk

  • 1 tbsp vinegar

  • 1/4 cup strawberry puree

Instructions

  1. In a bowl, add curd and baking soda and keep it aside to activate.

  2. In another bowl, take sugar and add oil to it. Whisk them well.

  3. Now add curd and baking soda mix to it and whisk again.

  4. Now sieve into this bowl, whole wheat flour and baking powder.

  5. Mix well.

  6. Add vanilla extract, milk and vinegar and mix it gently with a spatula.

  7. Preheat the oven or OTG at 180˚C for 15 minutes.

  8. Line the cupcake moulds with liners and fill them halfway through with the batter.

  9. Add 1 tsp strawberry puree to each.

  10. Cover it with a little batter and bake for 20-25 minutes at 180˚C.

  11. Once ready, frost the muffins with some whipped cream and some fresh strawberries.

  12. Christmas special Strawberry Cupcakes are ready!
