Eggless Vanilla Sponge Cake is thought to be the easiest but also the trickiest. To get the right moistness and softness you have to make sure to use the ingredients in the correct measurement and not to forget, do not overmix.

Ingredients
1.5 cups maida or all purpose flour
1 tsp baking powder
1 cup yogurt or plain curd
1/2 tsp baking soda
3/4 cup sugar
1/2 cup vegetable oil
1 tsp vanilla essence
some walnuts, for garnish (optional)
Instructions
Preheat the oven or OTG at 200˚C for 15-20 minutes.
In a bowl take curd or yogurt, add baking soda to it and keep aside.
In a separate bowl, add sugar and oil and whisk it well.
Sieve the flour and baking powder to the oil-sugar mix.
Mix it well and add vanilla essence to it.
Add the baking soda and curd mix.
Now gently fold the batter together till there are no lumps left.
Grease a cake tin and transfer the batter to it.
Garnish it with some walnut pieces on top.
Bake it at 180˚C for 35-40 minutes or till a skewer inserted comes out clean.
The softest and spongiest eggless vanilla sponge cake is ready!
