Boondi Laddoos are my favourite and since it is Ganesh Chaturthi, I couldn't have found a better reason to try out these super easy and delicious Boondi Laddoo!
Makes 15-16
Ingredients
1 cup besan or gram flour, from Natural Food India
Pinch of baking soda
2-3 drops yellow food colour
1/2 cup water
3/4 cup sugar
1/2 cup water
1 tsp elaichi or cardamom powder
Oil, for frying
1 tbsp ghee
1 tbsp pumpkin seeds
1 tbsp almonds and cashews, chopped
1 tbsp pistachios, chopped
Instructions
To make the boondi first, take besan in a bowl.
Add baking soda and yellow food colour and mix well.
Add water and make a batter of medium consistency.
Heat oil in a Kadhai or pan.
Take 2 slotted ladles, one for frying and one for draining.
Now take a spoonful for batter and pour into the oil from one of the saddle and spread it in circular motion on the ladle. The batter will drop in boondi form from the ladle.
Fry them till crispy. Drain and place them on the tissue paper.
Repeat the process to make all the boondi.
To make the sugar syrup, take a pan and add sugar and water to it.
Add cardamom powder to it and mix well to make syrup.
Add the fried boondi to the sugar syrup and gently mix them.
Let it rest for 30 minutes.
Meanwhile, heat ghee in a Kadhai or pan.
Add almonds, pistachios and pumpkin seeds and roast them till lightly brown.
Transfer to the boondi mixture.
Mash the boondi mixture slightly and make laddoos from them.
Delicious Boondi Laddoo are ready!
