Green Peas Fudge | Winter Special | Sugar Free

A unique and different winter treat made with the freshly available green peas, Do give this delectable Green Peas Fudge a try!


Makes 18-20 pieces

Ingredients

  • 2 cups green peas

  • Pinch of salt

  • 1/2 tsp baking soda

  • 2 1/2 cup milk powder

  • 3 cups water

  • 3 tbsp ghee or clarified butter

  • 1/2 cup jaggery

  • 1/4 tsp cinnamon powder

  • 1/2 tsp cardamom powder

  • 1 tbsp mixed nuts

Instructions

  1. Boil green peas in 2 cups water. Add salt and baking soda to it.

  2. Drain the water off and grind the peas into a coarse paste with 2 tbsp water.

  3. In a pan, melt the ghee.

  4. Add the peas puree to it and cook it for 10-15 minutes on low flame till it begins to leave the sides of the pan.

  5. In another pan, add 1/2 cup water and melt the jaggery in it.

  6. Add the melted jaggery to the cooked peas puree.

  7. Mix well and add milk powder to it. Mix nicely to remove all lumps.

  8. Add cardamom and cinnamon powder and cook till it leaves the sides of the pan. This will take another 10 minutes.

  9. Transfer to a greased tray.

  10. Garnish with chopped pistachios and refrigerate for an hour.

  11. Cut into desired shapes and serve the super healthy green peas barfi!
