Make 20 Idlis
Ingredients
1 cup white urad dal
2 cups idli rice
2 tsp methi dana or fenugreek seeds
Water, for grinding
1/2 tsp baking soda
1 tsp salt
Instructions
Soak urad dal with 1 tsp methi dana and rice with 1 tsp methi dana separately for 5-6 hours.
After 5-6 hours, drain off the excess water and grind them separately adding just 1/4 cup water in each, to achieve a drop consistency.
After grinding them to a smooth batter, mix them together and add 1/2 tsp of baking soda and 1 tsp of salt to it.
Keep it overnight to ferment.
After fermentation has happened, mix the batter with a spoon or spatula to get a smooth consistency.
Now grease your idli moulds and add 1 tbsp batter to each.
Fill a pressure cooker with 1 inch of water and let it boil.
Put inside the filled idli mould and cook without whistle for 10 minutes.
After 10 minutes, check if the idlis have cooked and then remove them using a knife.
Super-soft homemade idlis are ready! Enjoy them with hot sambhar.
