Jim Jam Cookies | Vanilla Coconut Cookies


Serves 6

Ingredients

  • 2 cup maida or all purpose flour

  • 1 cup powdered sugar

  • 1.5 cups soft salted butter

  • a pinch of salt

  • 1/2 tsp vanilla essence

  • 2 tbsp desiccated coconut

  • 2 tbsp milk

  • 3 tbsp mixed fruit jam

Instructions

  • In a bowl, add sugar and soft butter and whisk them till it turns slightly fluffy.

  • Now add the vanilla essence.

  • Sieve through the flour and salt.

  • Mix them together till it comes together to form a dough.

  • Form small dough balls using hands and press them gently.

  • Dip the upper side in milk and then desiccated coconut.

  • Create a finger impression in the centre and fill it with jam.

  • Place it on a baking tray lined with a parchment paper or baking sheet .

  • Preheat the oven or OTG (Mode: Fan + upper rod + lower rod) at 200*C for 15 minutes.

  • Then place the baking tray into the oven or OTG and bake at 180*C for 15-20 minutes.

  • After 15 minutes, take out the cookies and allow them to cool for another 15 minutes.

  • Indulge in the goodness of freshly baked Jim Jam cookies!
