Delicious twist to the regular puri aloo is the kaddu ki puri with aloo bhaji. It is so delicious and wholesome. Perfect for a get-together or a small occasion.

Ingredients
For Aloo Bhaji:
5-6 boiled potatoes, chopped
1 tsp haldi or turmeric powder
2 tsp salt or to taste
1 tsp jeera or cumin seeds
1 tsp kasuri methi
1 tsp coriander leaves, chopped
2-3 green chillies, slit
5-6 curry leaves
1/2 tsp red chilli powder
1/4 tsp garam masala
1/2 tsp dhania or coriander powder
1 tsp jeera or cumin powder
1 onion, chopped
1 tomato, chopped
1 tbsp mustard oil
For Puri (Makes 25-30 puris):
3 cups whole wheat flour or atta
1/2 cup suji or semolina
1 cup kaddu or pumpkin, shredded
2 tbsp oil
Water for kneading
1 tbsp kasuri methi
1 tsp ajjwain or carom seeds
1 tsp dhania or coriander powder
2 tsp salt
1/2 tsp red chilli powder
1 tsp haldi or turmeric powder
Instructions
For preparing the aloo bhaji, heat oil in a pan or Kadhai.
Add jeera and allow it to crackle.
Then add curry leaves and slit green chillies.
Add onions and cook them till lightly brown.
Add tomatoes and cook for a minute.
Then add all the spices and salt.
Add the boiled and chopped potatoes and mash them gently in the pan.
Mix everything well and garnish with some chopped coriander leaves.
For kaddu ki puri, begin with preparing the dough.
In a bowl, add atta and shredded kaddu. Mix well.
Add suji, salt, red chilli powder, dhania, haldi, ajjwain, kasuri methi and oil.
Finally using water knead a soft and tight dough.
Once the dough is ready, make some roundels or balls from it.
Roll each ball using a rolling pin to a small round puri.
Heat oil for frying.
When oil is hot, fry the puri on a medium to high flame.
Sieve the excess oil and transfer the hot puris to a plate.
Serve kaddu ki puri with aloo bhaji and boondi ka raita.
