Serves 4
Ingredients
1/2 pumpkin or kaddu, washed, peeled and chopped
1/2 tsp fenugreek seeds or methi dana
1 tsp jeera powder
1 tsp rai or mustard seeds
1/2 tsp red chilli powder
1 tsp turmeric powder
1/4 tsp garam masala powder (garnishing)
1 tsp sugar (optional)
1 tbsp meethi chutney (garnishing)
2 tbsp mustard oil
1/2 cup water
2 green chillies chopped
3-4 kadi patta or curry leaves
1 cup fried vadi
2 tsp salt
Instructions
Microwave the pumpkin cubes for 8 minutes.
In a pan heat oil and add the fenugreek seeds and mustard seeds and fry for a minute on a low flame.
Now add the curry leaves and green chillies and fry for some seconds.
Add the chopped pumpkin and all the dry spice powders and salt except garam masala.
Add the sugar if needed and add water.
Cover and cook for 10 minutes.
Meanwhile, fry the homemade vadi in some oil and add to the pumping subzi. Mix well. Cook for another 5 minutes and let the water dry up.
Garnish with coriander leaves and garam masala and serve it hot with phulkas.
