Winter calls for a warm bowl of freshly made soup and what can be better than the refreshing coriander and lemon. Do make the Lemon Coriander Soup.
Serves 6
Ingredients
2 tbsp garlic cloves, chopped
2 tbsp green chillies, chopped
1 cup coriander leaves, chopped
2 tsp oil
2 onions, finely chopped
1 carrot, finely chopped
3 cups hot water
2 tbsp lemon juice
2 tsp salt or to taste
1 tsp black pepper powder
1 tsp garlic seasoning
1 tbsp spreadable agar agar + 1/4 cup hot water
1 tbsp sugar
Instructions
In a pan, add oil and sauce the garlic and green chillies.
Then add onions and carrot and sauce till lightly roasted.
Add hot water and mix well. Let it come to a boil.
Add salt, sugar, black pepper powder and garlic seasoning to it and let it simmer cook on a low flame for 5-7 minutes.
In a separate bowl take some hot water and mix in the spreadable agar agar powder till no lumps are left.
Add this mix to the soup.
Finally, add in the lemon juice and coriander leaves.
The Vitamin C-rich Lemon Coriander Soup is ready! Enjoy warm with crispy bread crumbs.
