Lemon Rice | Quick Leftover Rice Recipes

Lemon Rice is one of the quickest and most delicious rice dishes to make whenever you're craving something light and tasty. So indulge in some delicious lemon rice with our quick nd easy recipe.

Serves 5

Ingredients

  • 1 tsp rai or mustard seeds

  • 2 tbsp mustard oil

  • 2 tsp salt

  • 1 tsp haldi or turmeric powder

  • 1/2 tsp red chilli powder

  • 2 tbsp lemon juice

  • 7-8 curry leaves or kadi patta

  • 1 cup boiled rice

  • 2-3 green chillies, finely chopped

  • 1 onion, sliced

  • 1 tbsp peanuts

  • 1/4 cup cashew nuts

  • Few coriander leaves, for garnish

Instructions

  1. In a kadhai or pan, add oil and fry the cashew nuts and peanuts till they turn reddish brown. Then remove them from the pan and keep aside.

  2. To the same pan, add rai and allow them to splutter.

  3. Then add green chillies, curry leaves and onions.

  4. Cook till the onions turn slightly brown.

  5. Then add the fried cashew nuts and peanuts and all the spices.

  6. Add the lemon juice and mix it well.

  7. Now add the boiled rice and mix everything together.

  8. Garnish it with some chopped coriander leaves.

  9. Serve the Lemon Rice with some boondi raita and enjoy the goodness of lemon.
