Serves 6
Ingredients
1.5 cups lobia or black-eyed peas, soaked overnight
3 tomatoes, pureed
1 onion, finely chopped
2 green chillies, chopped
3 tsp salt
1 tsp turmeric powder
1/2 tsp amchoor or dry mango powder
1/2 tsp red chilli powder
1/2 tsp black pepper powder
1/2 tsp garam masala
1 tsp coriander powder
1 tsp cumin seeds or jeera
1 tbsp mustard oil
1 tsp ginger-garlic paste
2 bay leaves or tej patta
Instructions
Pressure cook lobia with double the quantity of water for 6-7 whistles, till it turns soft.
Transfer the boiled lobia with water to a bowl.
In the cooker, add oil and saute the cumin seeds and tej patta.
Add onions, ginger garlic paste and green chillies. Saute well.
Then add the pureed tomatoes and saute for 5 minutes.
After 5 minutes, add in the spices and salt.
Finally add in the boiled lobia and pressure cook it for 6-7 whistles.
Garnish with some coriander leaves and serve with jeera rice.
