Did you know that the liquid left behind when you make paneer, i.e., Paneer Whey is actually a very good source of protein and extremely healthy!
Well, it is and therefore I use it to make this super healthy and nutritive Dosa Batter from it.
Makes 10-12 Uttapam
Ingredients
1 cup white urad dal
2 cups idli rice
2 tsp methi dana or fenugreek seeds
1 cup Paneer Whey, for grinding
1 tsp salt
Instructions
Soak urad dal with 1 tsp methi dana and rice with 1 tsp methi dana separately for 5-6 hours.
After 5-6 hours, drain off the excess water and grind them separately adding just 1/4 cup paneer whey in each, to achieve a drop consistency.
After grinding them to a smooth batter, mix them together and add 1 tsp of salt to it.
Keep it overnight to ferment.
After fermentation has happened, mix the batter with a spoon or spatula to get a smooth consistency.
Heat a pan and add 2 tbsp batter and spread it gently.
Add your desired toppings to the uttapam and cook well from both sides using some oil.
