Ingredients
1 bowl idli/dosa batter
Water, to add to the batter
3 tbsp oil
For the Filling:
1 tbsp oil
1 tsp mustard seeds or rai
1 tsp methi dana or fenugreek seeds
7-8 curry leaves or kadi patta
5-6 boiled potatoes, mashed
1/2 tsp red chilli powder
1 tsp haldi or turmeric powder
2 tsp salt or to taste
Instructions
First make the filling by heating oil in a pan.
Add rai and methi dana and let them crackle.
Add the curry leaves and saute for a few seconds.
Now mash in the potatoes.
Finally add in the spices and salt and mix it well. Switch off the gas.
Now take the dosa batter and add some water to it.
When you reach a medium consistency, heat a pan and pour some oil on it.
Pour 2 tbsp of batter on to the pan or tawa and spread it evenly.
Now put some oil on the sides and top.
Let it cook for a minute and then flip on to the other side.
Once both sides have cooked, add the potato filling to half of one side and wrap it over.
Serve your crispy homemade dosas with hot sambhar and coconut onion chutney.
