Papdi chaat made with fresh and crisp homemade papdi has to be the best thing you will see today. These are so easy to make and absolutely delicious to have!
Serves 4
Ingredients
For Papdi:
2/3 cup maida or all purpose flour
1/2 tsp ajjwain
1 tsp suji or rava
1 tbsp oil
1 tsp salt or to taste
1/4 tsp baking soda
oil, for frying
For Chaat:
2 tbsp imli chutney
3 tbsp curd or yogurt
1 tsp rock salt or kala namak
1 tsp red chilli powder
1 tsp jeera powder
1 tsp chaat masala
2 tbsp sev or namkeen
1 onion, finely chopped
1 potato, boiled and chopped
1 tomato, finely chopped
Few coriander leaves, chopped
Instructions
In a bowl, mix together oil, baking soda, maida, suji, ajjwain, salt and knead it into a firm dough using little water at a time.
Keep it aside covered with a damn cloth for 10 minutes.
After 10 minutes, divide the dough into two balls and roll each one of them into a big circle using little flour.
Using a fork, prick some holes to avoid puffing while frying.
Using a cookie cutter or bottle cap, cut small circles from the dough.
Heat oil in a pan or Kadhai and deep fry the papdi till golden brown, on a medium flame.
Drain off excess oil and transfer to a tissue paper.
Place the papdi in a serving dish.
Add some chopped onion, tomatoes and potatoes over it.
Pour some curd over the papdi and then some imli chutney.
Sprinkle rock salt, red chilli powder, jeera powder and chaat masala.
Garnish with chopped coriander leaves.
The mouth-watering Papdi Chaat is ready.
