Raj Kachori | Chaat Recipes | Homemade Raj Kachori

Rightly known as the Queen of Chaat, the Raj Kachori is a complete meal in itself. Filled with some soft urad dal vadas, moong sprouts, onion, potato and lots of chutney & curd! Its a scrumptious delicacy!

Serves 6
Ingredients
For Kachori:
2/3 cup maida or all purpose flour
2 tbsp besan
1/4 cup suji or rava
1 tbsp oil
1 tsp salt or to taste
1/4 tsp baking soda
oil, for frying
For Chaat:
2 tbsp imli chutney
3 tbsp curd or yogurt
6 urad dal vadas, soaked and drained
2 tbsp moong sprouts
2 tsp rock salt or kala namak
1 tsp red chilli powder
2 tsp jeera powder
1 tsp chaat masala
2 tbsp sev or namkeen
1 onion, finely chopped
1 potato, boiled and chopped
Few coriander leaves, chopped
Instructions
In a bowl, mix together oil, besan, maida, suji, salt, baking soda and knead it into a firm dough using little warm water at a time.
Keep it aside covered with a damp cloth for 30 minutes.
After 30 minutes, divide the dough into six balls and roll each one of them into a big circle using little flour.
Using a big katori or bowl, cut circles from the dough.
Heat oil in a pan or Kadhai and deep fry the kachori and puff it by pressing the slotted spoon.
Fry it on medium flame on both sides.
Drain off excess oil and transfer to a tissue paper.
Place the kachori in a serving dish. Create a hole on top.
Add soaked and drained vada, inside the kachori.
Add moong sprouts, chopped onion and potatoes over it.
Pour some curd and then some imli chutney.
Sprinkle rock salt, red chilli powder, jeera powder and chaat masala.
Garnish with chopped coriander leaves and sev on top.
The mouth-watering Raj Kachori is ready.
