Happy Navratri to everyone. This simple yet delicious Rose Makhana Phirni is perfect treat during the festive days of Navratri.
Serves 4
Ingredients
4 cups full fat milk
1/2 cup boiled sama rice, churned or grinded
2 tbsp ghee or clarified butter
2 cups makhana or fox nuts
3 tbsp sugar
1 tsp elaichi or cardamom powder
1/2 tsp rose essence
2-3 drops of yellow colour
Few saffron strands
2 tbsp mixed nuts (pistachio, cashews, almonds)
Instructions
In a pan, add ghee and roast the mixed nuts till golden brown.
Then in the same pan, roast makhana on a low flame, till lightly brown. Once done, remove from the pan.
To the pan, add milk and let it come to a boil.
Add grinded rice, sugar and elaichi powder.
Simmer and let it cook till it thickens. Keep stirring continuously.
Add makhana, yellow colour and rose essence and cook for 5 more minutes.
Serve chilled, garnished with roasted nuts and a few saffron strands.
