Sambhar | Idli Sambar | Homemade Sambar



Serves 6

Ingredients

  • 200 gms arhar or toor dal

  • 2 tbsp oil

  • 1 tsp rai or mustard seeds

  • 1 bay leaf or tej patta

  • 2-3 dried red chillies

  • 1 onion, sliced

  • 3-4 tomatoes, chopped

  • 3-4 tbsp sambhar masala

  • 1/2 tsp haldi or turmeric powder

  • 2 tsp salt, or to taste

  • 2 cups chopped vegetables, carrot, pumpkin, potato, bottle guard, brinjal, beans

  • 3/4 cup tamarind pulp or imli water

  • 3 cups water

For Tempering/Tadka

  • 2 tbsp oil

  • 1 tsp rai or mustard seeds

  • 2 dried whole red chillies

  • 6-7 curry leaves or kadi patta

  • hing or asafoetida powder, a pinch

  • 1 tsp red chilli powder

Instructions

  1. Soak arhar dal for about an hour.

  2. In a pressure cooker, add oil.

  3. To it add rai, bay leaf and dried red chillies.

  4. Add onions to it and saute well.

  5. Now add the tomatoes and all the spices to it.

  6. Add salt and simmer cook for 3-4 minutes.

  7. Add chopped vegetables according to you taste and choice, and soaked dal.

  8. Add tamarind pulp and water.

  9. Mix and then close the lid.

  10. Pressure cook the sambhar for 5-6 whistles or till the dal and vegetables blend well.

  11. For the tadka, in a pan add oil and rai.

  12. When it begins to crackle, add dried whole red chillies and curry leaves.

  13. Add red chilli powder and hing powder and switch off the gas.

  14. Pour the tadka over the prepared sambhar.

  15. Serve sambhar with steaming hot idlis and coconut chutney.
