Schezwan Fried Rice



Serves 5

Ingredients

  • 1.5 tbsp olive oil

  • 1 onion, chopped

  • 1 carrot, chopped

  • 1 capsicum, chopped

  • 5-6 garlic cloves, chopped

  • 1/3 cabbage, chopped

  • 1 tbsp vinegar

  • 2 tbsp soya sauce

  • 1.5 tbsp schezwan sauce

  • 1 tbsp tomato sauce

  • ½ tsp pepper powder

  • 2 tsp salt

  • 2 cups water

  • 1 cup rice, uncooked

  • 1 tsp sesame seeds or til, for garnishing

Instructions

  • In a pressure cooker, heat oil and saute onion and garlic.

  • Then add capsicum and stir fry on high flame.

  • Finally, add cabbage and carrots and stir fry for a minute.

  • Add vinegar, soya sauce, schezwan sauce, tomato sauce, black pepper powder and salt. Mix them well.

  • Now add in 2 cups of water and boil on medium flame.

  • Wash one cup rice throughly and drain the water.

  • Add the rice to the cooker.

  • Close the lid and let it cook for 2-3 whistles. Fried rice is ready!

  • Drizzle some sesame seeds and serve with manchurian in gravy or chilli paneer.
