Schezwan Vegetable Noodles | Schezwan Hakka Noodles

Make yourself Restaurant style Schezwan Vegetable Noodles at home in a few quick and easy steps. These are super spicy and tempting!


Serves 5

Ingredients

For Noodles:

  • 4 cups water

  • 1 tsp salt

  • 1 tsp oil

  • 2 pack of noodles

For Schezwan Sauce:

  • 1 tbsp oil

  • 1 inch ginger, finely chopped

  • 4-5 garlic cloves, finely chopped

  • 1 onion, sliced

  • 1 carrot, sliced

  • 7-8 french beans, chopped

  • 3 tbsp cabbage, shredded

  • 1/2 capsicum, sliced

  • 2 tsp salt or to taste

  • 1 tsp schezwan sauce

  • 1/2 tbsp chilli sauce

  • 1 tbsp soy sauce

  • 1 tbsp vinegar

  • 1 tsp black pepper powder

  • 1 tsp sugar

  • 1 tbsp green onions, finely chopped

Instructions

  1. Firstly boil 4 cups of water.

  2. Add 1 tsp salt and oil to it.

  3. Once it begins to boil, lower the flame and dip inside the noodles and cook them al dente. This will take only 5-7 minutes.

  4. Transfer them on a sieve to drain off the excess water and wash with cold water.

  5. In a saucepan or Kadhai, heat oil.

  6. Saute ginger, garlic and onion.

  7. Now add the rest of the vegetables and saute for about a minute.

  8. Add vinegar, soy sauce, schezwan sauce and chilli sauce.

  9. Add salt, sugar and pepper powder..

  10. Cover and simmer cook for 5 minutes.

  11. Remove the lid and add boiled noodles. Mix well.

  12. Garnish with some chopped green onions and serve hot.

  13. The hot and saucy Schezwan Vegetable Noodles are ready!
