Shahi Rabdi Ice Cream | Homemade Rabdi Ice-cream

Enriched with roasted almonds, cashews and pistachios, this shahi rabdi ice cream is so easy to make yet extremely creamy and delicious to have!


Serves 4

Ingredients

  • 1/2 cup Mithai Plus mix, by Tropilite

  • 2 tbsp sugar

  • 2 tetra pack amul cream

  • 200 ml full fat milk

  • 2 tbsp chopped pistachios

  • 2 tbsp saffron milk

  • 1 tsp elaichi or cardamom powder

  • 2 drops kewra essence

  • 1 tbsp cornflour

Instructions

  1. In a pan, boil milk and then add sugar and cornflour and whisk well.

  2. Lower the flame and add cream.

  3. Add Mithai Plus mix and keep stirring continuously till it thickens.

  4. Add some chopped pistachios, elaichi powder, kewra essence and saffron milk.

  5. Switch off the flame, cool it down and then transfer to a bowl with a lid.

  6. Sprinkle some chopped pistachios on top.

  7. Cover and freeze it for 6-8 hours or overnight.

  8. Diwali Special Shahi Rabdi Ice Cream is ready!
