Urad dal Dahi Bhalla are so easy to make and the results are so good, they are super soft and fluffy.

Ingredients
For Vadas:
1 glass white urad dal or black gram dal
1/4 cup water
1 tsp salt
1/2 tsp red chilli powder
Few coriander leaves, chopped
2-3 green chillies, chopped
Water, for soaking the vadas
For Dahi Bhalla:
4 tbsp imli chutney
6 tbsp curd or yogurt
2 tsp rock salt or kala namak
1 tsp red chilli powder
2 tsp jeera powder
1 tsp chaat masala
Instructions
Soak the urad dal for 6-8 hours in water.
After 6-8 hours, drain off the excess water and grind it using only 1/4 cup of water so that it has a thick consistency. You may grind it along with the coriander leaves and green chillies or add them later.
Now to the batter add salt, red chilli powder and coriander leaves and green chillies, if not added before.
Fill the batter into a vada mould or simply using spoon you can make round vadas.
Heat oil in a Kadhai or pan, and pour the batter from the mould.
Fry them on high flame till golden from both sides and take out on a tissue paper.
Boil some water in a saucepan and dip the vadas in it.
Let them soak for 15 minutes, then squeeze them to drain off excess water and keep them in a serving plate.
Pour some curd over the vadas and then some imli chutney.
Sprinkle rock salt, red chilli powder, jeera powder and chaat masala.
Serve soft and delicious Dahi Bhallas for lunch or dinner.
