Healthy and nutritive Spiced Bajra Crackers can be made easily and stored for about a month to enjoy healthy snacking!

Makes 50 Crackers
Ingredients
1 cup Bajra flakes or pearl millet flour
1/2 cup whole wheat flour
1 tsp ginger powder
1/2 tsp red chilli powder
2 tbsp dried fenugreek leaves or kasuri methi
2 tsp granulated sugar
2 tbsp sesame seeds
2 tsp salt or to taste
1/2 tsp turmeric powder or haldi
1/2 tsp amchoor or dry mango powder
3/4 tsp carom or ajwain seeds
3 tbsp oil
1 tsp cumin or jeera seeds
2/3 cup warm, water
Instructions
Take bajra flakes and grind them into a fine powder.
In a bowl, add bajra flour, whole wheat flour, all spices, salt, ajwain, sesame seeds, cumin seeds, sugar and oil.
Take 2/3 cup warm water and knead it into a soft and stiff dough.
Cover it with a damp cloth and keep it aside for 30 minutes.
After 30 minutes, divide into 4 parts and roll each part into a thin roti.
Using a cookie cutter or knife and cut into crackers of equal size.
Prick them using a fork.
Preheat the oven or OTG at 200˚C for 15 minutes.
Grease a baking tray.
Place a parchment paper and grease it with oil.
Place the crackers and bake at 200˚C for 30-35 minutes till slightly golden.
Guilt-free Baked Spiced Bajra Crackers are ready!
