Made with the goodness of sprouts and spinach, this Sprouts Spinach Dhokla, is everything what healthy looks like.
Starting your day with a healthy meal like this one ensures that you do not binge on anything unhealthy mid-day and stay full till lunch.

Serves 3
Ingredients
1 cup green gram or moong dal sprouts
1 cup spinach leaves or palak, chopped
4 tbsp besan or gram flour
1 packet eno or fruit salt
1.5 tsp salt
1 tbsp oil
2 green chillies, slit into halves
1 lemon juice
1 tsp sugar
1/4 cup water
7-8 curry leaves
1 tsp rai or mustard seeds
1 tbsp desiccated coconut
1/2 cup water
1 tbsp coriander leaves, chopped
Instructions
In a grinder, add moong dal sprouts and palak and grind them to a smooth paste using a little water.
Transfer the paste to a bowl and add besan and salt to it.
Mix the batter well. Add Eno or fruit salt and pour water on top.
Mix it well and keep it aside for 5-7 minutes.
Meanwhile, heat a cooker or large saucepan with 1 inch water and an inverted lid or stand inside it.
Grease an aluminium tin with oil.
Pour the dhokla batter into the tin and keep inside the cooker or pan.
Close with a lid that has an opening or a cooker lid without the whistle.
Now lower the flame and cook for 15-20 minutes or till an inserted skewer or knife comes out clean.
For the tadka or tempering, in another pan, heat oil and add rai or mustard seeds.
When they begin to crackle, add curry leaves and green chillies.
Saute them and add lemon juice, sugar and water.
Boil the tadka and pour it over the freshly steamed Sprouts Spinach Dhokla.
Garnish with desiccated coconut and fresh coriander leaves.
Serve the Sprouts Spinach Dhokla with some fresh mint chutney.
