Restaurant style veg. sweet corn soup is so easy to make, especially when we have abundance of corn in the market.
So relish the warm and tempting sweet corn soup in the rainy season and relish the fresh flavours.
Serves 5
Ingredients
For Corn Paste:
1/2 cup sweet corn
2 tbsp water
For the Soup:
1 tbsp oil
1 inch ginger, finely chopped
4-5 garlic cloves, finely chopped
1 green chilies, finely chopped
1/4 cup sweet corn
5-6 green onions, finely chopped
1 carrot, finely chopped
8-10 french beans, finely chopped
4 cups water
2 tsp salt or to taste
1 tbsp vinegar
1 tsp black pepper powder
1/4 cup cornflour paste using 1 tsp cornflour, 2 tbsp water
1 tbsp green onions, finely chopped
Instructions
In a grinder, add 1/2 cup sweet corn and 2 tbsp water and grind it to a smooth paste.
In a saucepan or Kadhai, heat oil.
Saute ginger, garlic, green chillies and green onions.
Now add the rest of the vegetables and saute for about a minute.
Add vinegar, corn paste and water.
Add salt and pepper powder and allow it to come to a boil.
Cover and simmer cook for 5-7 minutes.
Remove the lid and add cornflour paste to get the desired soup consistency.
Garnish with some chopped green onions and serve hot.
