Tomato Rice | Leftover Rice | Quick & Easy

Tomato Rice is so delicious to have that you can make it any day and relish the freshness of tomatoes!

Serves 5

Ingredients

  • 3 large tomatoes, finely chopped

  • 1 cup boiled rice

  • 2 tbsp ghee or clarified butter

  • 1 tsp jeera or cumin seeds

  • 1/2 tbsp ginger-garlic paste

  • 2-3 green chillies, finely chopped

  • 1 onion, sliced

  • 2 tsp salt or to taste

  • 1 tsp red chilli powder

  • 1 tsp degi mirch powder

  • 1 tsp garam masala

  • 3/4 cup peas

  • Few coriander leaves, for garnish

Instructions

  1. In a kadhai or pan, add ghee and the cumin seeds.

  2. When they begin to crackle, add ginger garlic paste and green chillies.

  3. Add onions and cook them until they become translucent.

  4. Now add the tomatoes and cover and cook them until soft and mushy.

  5. Now remove the lid and add in all the spices and peas and cook for another 5 minutes.

  6. Finally, add the boiled rice, mix well and garnish with some chopped coriander leaves.

  7. Serve your tomato rice hot with some cucumber raita.
