Tori Curry | Turai Ki Subzi



Serves 4

Ingredients

  • 1 kg torai, peeled, washed and chopped

  • 1 tsp ginger garlic paste

  • 1 tsp jeera or cumin seeds

  • 1 tsp coriander powder

  • 1 tsp turmeric powder

  • 2 tsp salt

  • 1/2 tsp red chilli powder

  • 1/2 tsp amchoor or dry mango powder

  • 1/2 tsp garam masala

  • 1 tbsp mustard oil

Instructions

  1. Firstly, peel and chop torai in small pieces. And them wash them thoroughly.

  2. In a pressure cooker, add oil and jeera seeds and allow them to crackle.

  3. Then add ginger-garlic paste and add 1 tbsp water.

  4. Now add all the spices and salt and sauce them for a minute on low flame.

  5. Finally add the chopped torai and add 1/4 cup water to it.

  6. Close the lid and allow it to cook for 3 whistles.

  7. Open and check if the water released is extra then you can cook it without the lid on high flame for 2-3 minutes.

  8. Enjoy the water-rich vegetable with phulkas.
