Bombay Special, Vada Pav Bites, are super scrumptious and a tempting snack!
Serves 6-7
Ingredients
6 pao, cut into halves
For vada:
2 tbsp oil
1 tsp mustard seeds or rai
1 tsp cumin seeds or jeera
7-8 curry leaves
1 tbsp ginger garlic paste
1 tbsp green chilli, chopped
1/2 tsp red chilli powder
1/2 tsp turmeric powder
4-5 potatoes, boiled & mashed
Salt to taste
1 tsp lemon juice
1 cup besan
1 tsp ajjwain or carom seeds
Salt to taste
Water to make the batter
For dry chilli powder:
1 pao
1/2 cup besan crumbs
5-6 garlic cloves
1 tbsp kashmiri mirch powder
Salt to taste
Instructions
Heat a pan and add oil to it.
Add mustard seeds and cumin seeds and allow them to crackle.
Add ginger garlic paste, curry leaves and chopped green chillies.
Add turmeric powder, salt and red chilli powder.
Add mashed potatoes to it.
Mix it well and sprinkle lemon juice.
Transfer the mixture to a bowl and allow it to cool down.
For the besan coating, take 1 cup besan, add ajjwain and salt to it.
Add water to make a semi-thick batter and keep it aside for 10 minutes.
Now make small round balls using the potato filling and dip it in the besan batter.
Deep fry these Vedas in hot oil over medium flame.
Fry some besan crumbs with the remaining besan batter.
For the dry powder, dry roast the garlic cloves in a pan.
Roast one pao broken into crumbs.
To a grinder, add roasted garlic cloves, pao and besan crumbs. Add salt and Kashmiri red chilli powder and churn it to a fine powder.
Heat a pan and roast one pao slice from both sides using butter or ghee.
Place the slice on a plate.
Spread some green chutney over the slice, add some besan crumbs to it. Press over the vada on it and sprinkle it with some dry powder masala.
Serve your Vada Pao Bites topped with some green chillies.
