Pesto sauce is usually made with basil leaves, but we tried making it with broccoli and the result was just amazing! Try out the Vegan Broccoli & Corn Pasta and enjoy sheer deliciousness!
Serves 4
Ingredients
1 cup broccoli florets, blanched
1/4 cup walnuts
2 garlic cloves
2 tbsp olive oil
2 tsp salt
1 tsp black pepper powder
1 tsp garlic seasoning
1 cup whole wheat pasta, boiled
1/2 cup sweet corn
1 tsp spreadable agar agar
1/2 cup warm water
Instructions
In a food blender, add blanched broccoli florets, walnuts, garlic cloves and olive oil, and blend it to a smooth paste.
In a pan, add 1 tsp oil and sauté the paste.
In a bowl, take warm water and add spreadable agar agar to it and mix well.
Add it to the pan and add salt, pepper and garlic seasoning.
Add sweet corn and boiled pasta to it.
Mix well and simmer cook for another minute or two.
Vegan Broccoli & Corn Pasta is ready!
