Trick or Treat? It's Halloween! October means its time to celebrate halloween, so here we are with our treat, the Vegan Pumpkin Granola Tarts!
Makes 12 Tarts
Ingredients
1/2 tsp ginger powder
1 cup pumpkin puree
3 flax eggs
1/3 cup brown sugar
1.5 tsp cinnamon powder
1/4 tsp cloves, grounded
1/2 tsp salt
1 tsp vanilla essence
3/4 cup non-dairy whipping cream
oil, for greasing
2 cups granola
1 cup pitted dates
Pinch of salt
Instructions
Preheat the oven or OTG at 180˚C for 15-20 minutes.
Coarsely grind pitted dates.
In a bowl, add granola, dates and salt and mix them to form a sticky mixture.
Grease a muffin tray or moulds.
Take 3-4 scoops of granola-dates mixture and press it gently on the walls of the muffin mould to form a tart.
Refrigerate it for 10 minutes.
In a another bowl, mix pumpkin puree, flax eggs, ginger powder, brown sugar, salt, grounded cloves, cinnamon powder, whipping cream and vanilla essence.
Fill the granola tarts with this pumpkin cream and top it with a pecan.
Bake them at 180˚C for 40-45 minutes.
Halloween special Pumpkin Granola Tarts are ready!
