Serves 4
Ingredients
3 tbsp salted butter
3 tsp spreadable agar powder
2 cups milk
2 tsp salt
1 tsp black pepper powder
2 cheese cubes or slices
1/2 cup processed cheese
1 tbsp olive oil
1 carrot, diced & blanched
1/2 cup peas, blanched
1/2 cup sweet corn, blanched
1/2 cup french beans, diced & blanched
2 capsicum, diced
1/2 cup cauliflower, blanched
1 tsp salt or to taste
1/2 tsp Black pepper
2 tsp oregano
2 tsp red chilli flakes
Instructions
Heat butter in a pan on medium heat, add some oregano and chilli flakes, stir and let the butter melt completely.
Add the milk slowly and gradually.
Add salt & pepper, and spreadable agar, whisk well and cook further for 2-3 minutes. Keep whisking continuously to avoid lumps.
Add 2 cheese cubes or slices and whisk well for a minute and then turn off the gas.
In another pan, add olive oil and the veggies, salt and pepper. Sauté for 2-3 minutes.
Transfer them to the baking dish and pour over the freshly prepared white sauce and mix well.
Grate some processed cheese over it. Sprinkle some oregano and chilli flakes.
Preheat the oven for 10 mins at 200˚C and bake it at 200°C for 20 minutes.
Serve your cheesy Vegetable Au-Gratin hot with some freshly toasted bread.
