Vegetable Chopsuey or American Chopsuey is an Indo Chinese dish that comprises of two main components, the sweet and sour sauce and crispy noodles.
Serves 4
Ingredients
For Noodles:
3 cups water
1 tsp salt
1 tsp oil
1 pack of noodles
1 tsp cornflour
oil, for frying
For Sauce:
1 tbsp oil
1 inch ginger, finely chopped
4-5 garlic cloves, finely chopped
1 onion, sliced
1 carrot, sliced
3 tbsp cabbage, shredded
1/2 capsicum, sliced
4 cups water
2 tsp salt or to taste
1 tsp schezwan sauce
1 tbsp soy sauce
1 tbsp vinegar
1 tsp black pepper powder
1 tsp sugar
1/4 cup cornflour paste using 1 tsp cornflour, 2 tbsp water
1 tbsp green onions, finely chopped
Instructions
For preparing the fried noodles, firstly boil 3 cups of water.
Add 1 tsp salt and oil to it.
Once it begins to boil, lower the flame and dip inside the noodles and cook them al dente. This will take only 5-7 minutes.
Transfer them on a sieve to drain off the excess water.
Add 1 tsp cornflour to the noodles and mix them well.
Heat oil in a saucepan or Kadhai and deep fry the noodles in batches, on a medium flame, till golden and crispy.
In another saucepan or Kadhai, heat oil.
Saute ginger, garlic and onion.
Now add the rest of the vegetables and saute for about a minute.
Add vinegar, soy sauce, schezwan sauce and water.
Add salt, sugar and pepper powder and allow it to come to a boil.
Cover and simmer cook for 5-7 minutes.
Remove the lid and add cornflour paste to get the desired consistency.
Garnish with some chopped green onions and pour over the crispy fried noodles.
Restaurant style Vegetable Chopsuey is ready!
