Vegetable Poha | Flattened Rice Snack



Serves 4

Ingredients

  • 2 cups poha

  • 1 tsp turmeric

  • 1/2 tsp red chilli powder

  • 1 tsp jeera powder

  • 2 tsp salt

  • 1 tbsp olive oil

  • 1/2 tsp rai or mustard seeds

  • 2 tbsp peanuts

  • 1 onion, sliced

  • 1 green chilli, chopped

  • 2 potatoes, chopped

  • 1 tomato, chopped

  • 6-8 kadi patta or curry leaves

  • 1 tbsp sugar

  • 1 lemon

Instructions

  1. To a strainer, add poha and rinse it under running water until it turns soft.

  2. Add turmeric and sugar to the poha and mix well. Cover and keep for minimum of 20 minutes.

  3. Heat oil in a pan on medium heat. Once the oil is hot, add the mustard seeds and let them pop.

  4. Then add the chopped onion, green chillies and curry leaves. Cook for 2 minutes until the onions turn brown.

  5. Now add peanuts and stir and cook till they begin to crackle in about 5 minutes.

  6. Now add the tomatoes, potatoes, all masalas and salt. Cook for 1-2 minutes.

  7. Finally add the poha and let it cook for 2 minutes. Then turn off the heat and squeeze in the lemon juice.

  8. Garnish your vegetable poha with some bhujia or sev and serve with tea.
