Whole Wheat Chocolate Beetroot Muffins | No Maida | No Refined Sugar


Makes 10 Muffins

Ingredients

  • 1 cup atta or whole wheat flour

  • 2 drops red food colour, optional

  • 1/4 cup cocoa powder

  • 1 beetroot, grated

  • 1 cup curd or yogurt

  • 1/2 cup brown sugar

  • 1/2 tsp baking soda

  • 1 tsp baking powder

  • salt, a pinch

  • 1 tsp vanilla essence

  • 1/4 cup oil

  • 1 tbsp mixed nuts, chopped

Instructions

  1. Grind Beetroot with oil to form a puree .

  2. In a bowl, sieve all the dry ingredients and then add the beetroot puree, vanilla essence and red food colour to it.

  3. Blend it to form a medium consistency batter.

  4. Preheat the oven or OTG (Mode: Fan + upper rod + lower rod) at 200˚C for 15-20 minutes.

  5. In a baking tray, place the muffin liners.

  6. Now add 1.5 tbsp batter to each muffin cup and sprinkle some chopped nuts on top.

  7. Bake the muffins at 180˚C for 15-20 minutes.

  8. Use a toothpick to check if they have baked well. The toothpick should come out clean.

  9. Your healthy whole wheat chocolate beetroot muffins are ready!
