  • 1/2 cup lukewarm water

  • 1 tsp active dry yeast

  • 1 tsp red chilli flakes

  • 1 tsp oregano

  • 100 gms paneer or cottage cheese, cubes

  • 1 capsicum, finely chopped

  • 1 onion, finely chopped

  • 2 tomatoes, finely chopped

  • 1 tbsp pizza sauce

  • 1 tbsp tomato ketchup

  • 1/2 tsp red chilli powder

  • 1 tsp salt

  • 1/2 cup water with 1/4 tsp sugar dissolved

Instructions

  1. In a bowl, take 1/2 cup lukewarm water (not hot).

  2. Dissolve sugar in it and add dry yeast.

  3. Keep it aside for 30 minutes.

  4. After 30 minutes, bubbles will start forming, which means your yeast has activated.

  5. Preheat the oven or OTG at 200˚C for 15 minutes.

  6. In another bowl, take 3 cups maida, add 1 tbsp oil and add salt to it.

  7. Pour the yeast and water mixture to this and knead the dough for 10 minutes until smooth and soft.

  8. Cover and keep it aside for 1-2 hours.

  9. For the filling, take a pan and add 1 tbsp oil to it.

  10. Add onion and capsicum and sauce them on medium flame.

  11. Add tomatoes and cover & cook for 2-3 minutes.

  12. Add salt, red chilli powder, tomato ketchup and pizza sauce and mix well.

  13. Finally add in paneer cubes and switch off the flame.

  14. Keep it aside to cool.

  15. After 2 hours, the dough will double in its size.

  16. Punch the dough and knead it again for 5 minutes.

  17. Divide it into 5 parts and roll each part into a ball.

  18. Using a rolling pin, roll each dough ball into a circle, apply water and sugar mix on the sides and fold it inside from three sides.

  19. Now add 1 tbsp paneer stuffing inside and using the water-sugar mix pinch the three sides, on top, in the centre.

  20. Brush little oil on each paneer parcel.

  21. Drizzle some oregano and chilli flakes.

  22. Grease a baking dish and sprinkle some dry flour over it.

  23. Bake the Zingy Paneer Parcels at 230˚C for 20-25 minutes.
